Mom's Amazing Taco Dip

I LOVE this taco dip. So does everyone else who comes within 10 feet of it! When I used to work at the bank, I brought it in one day when we did a potluck, and I received many requests afterward from my co-workers to bring it to baby showers, get-togethers, BBQs, etc. My mom has been making this as a side dish for as long as I can remember, and it's always a big hit. I know this is more of a summery-type of dish, but my little brother came to visit Will and I in Boston this weekend, and since we were having a very late dinner on the North End, I wanted to make something to snack on so we weren't ravenous by the time we got to the restaurant. It's incredibly easy to make, and you will have some VERY happy guests!

Ingredients:

1 28-oz can refried beans
1/2 cup mayo (I use low fat)
1 cup sour cream (again, I use low fat)
about 2 cups guacamole, either homemade or a really good store-bought brand
about 3 cups shredded Mexican cheese
1 can jumbo black olives, sliced
green onions, sliced
salsa and chips to serve on the side
1 pkg taco seasoning

Directions:

1. On a large serving platter, spread the refried beans around until completely covered.
2. In a small bowl, mix together the mayo, sour cream, and taco seasoning. Spread over the refried beans.
3. Spread the guacamole over the mayo/sour cream mixture.
4. Sprinkle the sliced green onions over the platter.
5. Cover the mixture with the shredded cheese, then the sliced olives. Cover and refrigerate for at least an hour before serving. Serve with chips and salsa.

  4. Funny you should mention that, Olia-a few days before Will and I got married, my parents hosted a BBQ at our house for anyone who was in town. Maraty and Laura showed up, and they pretty much hung around the taco dip table the whole time they were there! :)
