Buckeyes (the afore-mentioned chocolate peanut butter dessert)


When I posted the blog about our anniversary dinner, I completely forgot to include the dessert I made. One of my co-workers is from Ohio, and months ago at a work potluck she brought in buckeyes. I would say they lasted approx. 10 minutes-they were absolutely delicious! She said they were very easy to make, and I knew right away that was something I wanted to make for Will. The buckeyes were a little time-consuming, but the recipe I found on www.allrecipes.com (courtesy of Tammy Winters) was very simple.

Ingredients:

1 1/2 cups smooth peanut butter
1 cup butter, softened
1/2 tsp vanilla extract
6 cups confectioners sugar
4 cups semisweet chocolate chips

Directions:

1. In a large bowl, mix together the peanut butter, butter, vanilla and confectioner's sugar. The dough will look dry. Roll into 1-inch balls and place on wax-lined cookie sheet.

2. Press a toothpick into each ball, and put the cookie sheet in the freezer to chill the balls until firm, about 30 minutes.

3. Melt chocolate chips in a double broiler over the stove, stirring frequently until smooth.

4. Dip frozen peanut butter balls in chocolate, holding on to the toothpick. Leave a small portion of peanut butter showing at the top so they look like Buckeyes. Put them back on the cookie sheet, and chill in the refrigerator until ready to serve. Remove the toothpicks.
